As of matter of fact, our research does not show any formal sittings for a
oil portrait until some six years later. This may be the OLDEST oil painting
of her and as such, the image is a wonderful collectors item.]

By the late 19th century, New York City was the second
"PINNACLE" of the culinary arts. These recipes originated in one of the
Restaurants (located on 28th Street, between Fifth Avenue and Madison) that catered to
Broadways elite and noted personalities of the day.
The restaurant catered special meals to such celebrities as Lillian
Russell accompanied by J. B. "Diamond Jim" Brady, Thomas Edison, Tony Pastor,
Marshall Field, Adolphus "Anheiser - Budweiser" Busch, Victor Herbert, and Sam
Schubert. You could catch Billy Pollard doing a Scottish dance, hear Dora Pelliter
sing her "Gilded Age" melodies. Political visitors included Mayor Hugh
Grant and Theodore "Teddy" Roosevelt.
In the 1890's,
everyone ate where "Diamond Jim" Brady and Lillian Russell ate.
Diamond Jim Brady was a main attraction because of his constant
companion Lillian Russell and the sheer volume of food he would ingest. She would
eat like a "bird" and he like an "elephant". Truthfully, he
could only eat the equivalent of 8 people at each sitting. His favorite supper
sometimes required pre-preparation a day in advance and consisted of an appetizer of three
dozen raw Maryland oysters (Privately, he frequently joked about the positive effect they
had on him), six breaded soft-shell crabs (if in season), and a pot of Roasted Chicken or
Fish soup. His main course consisted of two whole ducks; six or seven broiled
lobsters with corn muffin/crabmeat stuffing, a Standing Prime Rib Roast or Baked Ham, and
various side dishes. For dessert, the gourmand enjoyed pastries and an occasional
cake or two. He frequented this off-Broadway Restaurant and thoroughly enjoyed his
special meals. Special meals were created for him and named (Diamond Jim Style) on
the menu.
One of the Famous
Personalities to eat at this Restaurant was our future 26th President Theodore Roosevelt.
Occasionally dishes were created or reproduced for other important guests. One
was Theodore "Teddy" Roosevelt, who later became the Governor of New York State
and 26th President of the United States. One of his favorite dishes was
